Dark teas are subjected to a period of microbial fermentation as the final stage of processing. This stage can be from a few months to several years as the tea is aged. The most famous dark tea is from Pu’erh in Yunnan Province, China, for which the Vietnamese equivalent in Pho Nhi. Dark teas typically have earthy or peaty notes.
