Our very own charismatic, limited edition Signature Oolong is a top grade green Oolong Tea produced from the Thanh Tam (Quingxin) cultivar that has been roasted multiple times over an extended period to simulate an aged tea to outstanding effect. Roasting transforms the tea leaves making them much darker and producing a crystal clear sparkling liquor that has an aged smokiness with notes of liquorice and fennel.   The tea has great staying power and can be infused up to 7 times.  

Signature Oolong is based on a lightly oxidise oolong tea which is then roasted in our own workshop. The tea is gently heated according to to our roasting profile after which it is allowed to rest in a controlled environment.   The process is then repeated until the desired characteristics are achieved.   In total the roasting process is repeated 12 times over a 3 month period.
