The Process of Tea Manufacture in Vietnam

Tea Process

The way that tea is processed is fairly consistent throughout the world.  We now know that all tea is produced from the leaves of the camellia sinensis plant and its two main varieties camellia sinensis sinensis and camellia sinensis assamica - although there has been much cross breeding and many cultivars (cultivated varieties) produced for specific purposes and terroirs.

From place to place there may different standards for Harvesting.  It is traditionally performed by hand but can be by machine and in some places hand picking is done using a knife rather than the fingers.  The Fixing stage may be undertaken by a variety of methods including steaming, frying or baking.

For teas such as White Tea and Yellow Tea there is no internationally agreed definition and these may vary from country to country.

We decided to make our contribution by producing this graphic which summarises tea processing in Vietnam with a slant towards the wild grown teas that we have a particular interest in.
